VINIFICATION

Harvest: Mid-October
Winemaker: Davide Rosso

Fermentation takes place on average in 28 days, depending on the vintage, with daily pumping over of the wine mass and mid-term delestages (fermentation in concrete tanks).
Refinement takes place in large 25 hl oak barrels from the forest of Fontainebleau (from 18 to 30 months depending on the harvest).

FEATURES

Aromas: Red cherry, macerated strawberry, notes of liquorice, violet and cocoa.
Taste: Wide and full-bodied.
Thick and ripe tannins.
Pairings: Aged cheeses, roast leg of lamb, juniper hare
Serving temperature: 16-18°C.
