Vinification

Harvest: Mid-October

Fermentation takes place on average in 28 days, depending on the vintage, with daily pumping over of the wine mass with mid-term delestages (fermentation in concrete tanks).

Refinement takes place in 15 hl Slavonian oak barrels (from 18 to 36 months depending on the harvest).

 

Features

 

Aromas: dark tones, hints of cocoa and chocolate, ripe raspberry, plums and peppery hints.

Taste: sapid and juicy; delicious with soft tannins on the palate.

Pairings: “al civet” hare, fillet with green pepper, stuffed pheasant.

Serving temperature: 16-18°C.
